It has been a minute since I posted, but sometimes life happens. Since my last post, I’ve been trying to develop some healthy eating habits to lower my cholesterol. One of the changes I’ve made is making this Golden Granola recipe so that I can start my day with a healthy breakfast.
I used to eat store bought granola until I noticed how much added sugar is in them. Making my own, I use maple syrup instead of refined sugars and limit the amount. I also add turmeric, which has anti-inflammatory and antioxidant properties, and ginger, which also has health benefits. I have this with plain Greek yogurt and fresh fruit for a delicious and nutritious start to my day.

Golden Granola

Ingredients
- 3 c. organic rolled oats
- 1 c, pecans or walnuts, chopped
- 2 Tbsp olive oil
- ¼ c. maple syrup
- 2 tsp. turmeric
- 2 tsp. ground ginger
- 1/2 tsp. kosher salt
- 1/8 tsp. black pepper
Directions
- Step 1 Preheat the oven to 325° and chop the nuts. Line a baking sheet with aluminum foil. Grease the foil with 1 Tbsp olive oil.
- Step 2 Mix oats, nuts, and remaining olive oil together in a bowl. Mix the maple syrup, turmeric, ginger, salt, and pepper together.Pour over the oat mixture and stir well until oats and nuts are evenly coated.
- Step 3 Bake at 325° for 20-25 minutes, stirring 1-2 times to ensure even baking. Remove from oven and cool. Store in an air tight container.
- Step 4 Serve with yogurt and berries.
